I’m so excited! My kids and grandkids are coming for a visit in a couple weeks to the cabin on the lake. I have limited means of cooking here, a grill, an electric skillet, and a microwave/convection oven, so it’s always a challenge to find a way to prepare a meal that is both appetizing AND coordinated to all be done at the same time!
I like to make breakfast for all the kids – not an easy task to coordinate eggs, bacon, hashbrowns, etc with my limited cooking apparatuses. I love frittatas, but that is one that I haven’t been able to adapt, so I started experimenting! Here is what we had yesterday morning!
Sausage – Cheese – Egg Breakfast Fauxtata |
- 2 slices bread (I used buttermilk bread) – broken up into smallish pieces
- 1 cup cooked and crumbled sausage
- 1/2 cup shredded cheese (I used cheddar)
- 1/2 green pepper chopped
- 1/4 cup chopped onion
- 3 eggs
- 1 cup milk
- salt & pepper to taste
- Preheat oven to 350
- Lightly oil a 9 x 9 (or 8 x 8) baking pan
- Place torn bread in the bottom
- Sprinkle sausage, green peppers, & onions on top of bread.
- Sprinkle cheese on top of all that
- Whisk up your eggs, milk, & salt and pepper
- Pour egg mixture over all.
- Bake at 350 30 minutes or until puffy and golden brown
Double ingredients – and pan size for more people. This was 2 times as much as needed for 2 people.
Add whatever extras you want- mushrooms, spinach, etc. or even change up the cheese for a different taste! I haven’t tried it yet, but I bet you could use crisp bacon instead of sausage too!
