I love all the fresh fruit now available at the market! We get so hot working outside, sometimes we just want something light (and sweet) to refresh us. This salad fits that bill perfectly! It’s also great for a luncheon as your main course served with a light toasty bread and some delicious iced green tea.
Summer Berry and Mango Fruit Salad |

A delicious light fruit and green salad with wonderful texture and mixture of flavors. Very refreshing!
Ingredients
- 2 cups assorted fresh berries – strawberries, raspberries, blueberries, blackberries – washed and the strawberries halved. I use 1/2 cup each, but you can use more or less of a particular berry depending on your favorite and availability
- 2 mangos Peel, seed, and dice them
- Fresh salad greens – torn
- 1/4 cup fresh cilantro
- 8 or 10 very thin slices of red onion
- 1/2 cup freshly grated parmesan cheese
- 1/2 cup toasted nuts – once again – your favorite. I like walnuts!
- 1 cup Raspberry Vinaigrette salad dressing
Instructions
- Put the 1 cup of Raspberry vinaigrette dressing and 1/2 of the diced mango in the blender and whiz it until it’s smooth.
- Toss the remaining mango, the onion, the cilantro and the greens together.
- Drizzle the greens with the Mango-Raspberry Vinaigrette dressing.
- Top with Berry mix, nuts and then sprinkle the parmesan cheese on top.
- Serve and enjoy!
